I attempted to flash the Remix OS to mine and it seemed to work, but got hung up on the Remix OS loading screen when I tried to boot it. When I was downloading the OS from the Pine wiki I noticed that there appear to be builds made for the various sized cards, but they top out at 64GB. I'm a total novice so there may be something I'm missing here, do I have to wait until there's a new build for the OS that's compatible with the 128GB card?
You should be able to put a 64GB image onto a 128GB microSD without issues. Problems would come from burning method used to burn the OS and also the integrity of the microSD card (i.e. whether it perhaps misreports its storage capacity).
I checked the card out and it's legit, I just may be doing this wrong. I got PhoenixCard and downloaded the Remix OS image at the bottom that says "Phoenix Card Image". Was that not the right one? The one above it is DD image for 64GB microSD card, should I use that one instead?

Which image did you flash to your card?
Its the Phoenix Card image of "Android 5.1.1 Image (HDMI Video Output) Release 20160505"
