Updating Android version

Question 
I tried searching, but couldn't find anything about how to update the Android version on the device. I assume we're not supposed to reflash the card and lose all the data on it and start fresh? What's the procedure?

I'm especially interested in the 7.0 versions.

One of the ways is to:
1. Unpack image,
2. Mount unpacked image to loopback,
3. Insert SD card,
4. dd first and second partition from unpacked image to sdcard.
