Pinebook pro poor performance on 5Ghz WiFi

One small detail I have run into with the newer drivers; is that protected management frames have sometimes caused issues associating with the access point.
If you can, it may be worth a trial to see if you change turn these off on your access point for a trial run first.
Also smaller channel widths can help with stability.
