Your phone will function pretty much the same running from the sd cards as from the eMMC.
But it will feel a little bit 'snappier' once you do install the system on the eMMC...
ie: the apps will open a bit quicker.
Meanwhile the sd cards do make it much easier to 'test drive' the different operating systems,
rather than installing each onto your eMMC.
Once you decide on which operating system you want permanently and install that to your eMMC.
Then you can use your sd card for extra storage.
