Are the phone cameras all built to the same standard, same connectors, same pinouts, same data formats? If so, I'm thinking I could plug in a better camera and have it just work. Any chance of that?

There is no standard that is used everywhere. You can even find the PinePhone's main camera sensor (OV5640) with all kinds of different connectors. There may be some standards, but it's not like you could just exchange any camera module for another. I guess it's the same for ways of interfacing with the sensors. And the Allwinner A64 is limited to 5MP, so that's that ...
