I gave up LibreOffice on the Pinephone for the time being. But I think Arch Linux ARM with LibreOffice and costumization for the Pinephone would be the most promising solution for this problem:

The video shows that it LibreOffice is usable on the Pinephone screen. I give up changing distros on the Pinephone to solve this problem. I changed from Ubports to postmarketOS to get the Pinephone keyboard working. I will not change to Arch Linux ARM now. But If someone is interested in continuing the project LibreOffice on the Pinephone, this is where I would continue.
