I am not sure if Remix is rooted, or if you can root it... to use a modifiable Android you'll need to install the rooted SD img for Android.

Remix is not rooted and can't be rooted. I will then hope the next update will solve some of the issues found.  

An ordinary rooted android could also be an option but I don't like the default desktop setup - It's not intended to be used on a 40" TV / monitor but a small tablet.
Is there a way to fix it? ( The high resolution is wasted by big icons and app headers)

You could try one of the many launchers available for android. I am using the Lightning Launcher for my android setup and it looks good on my 55" tv. 
The reason I chose Lightning Launcher is because of all the possibilities of customization.
