Well, you could just download the Signal client for the Pinephone, install it with

sudo apt install ./axolotl_1.2.0-1_arm64.deb 

and bin your iPhone.

(There are, by the way, reliable no-spy alternatives to iOS and Android out there for people who do not like to tinker.)
