Thanks for the input here and private ones but the question is specifically about mobian-installer.
Because AFAIK that's the only way to get disk encryption.

I tested successfully bookworm nightly but no disk encryption which is IMHO a nogo outside of testing.
If was just to install on eMMC, yes, jumpdrive, etcher and so on would be sufficient
