last time I tried it (March?) pmbootstrap installed sshd by default for the pinephone, and prompted for adding the public key on the machine you were running it from to the image's authorized_keys. After running pmbootstrap you can always mount the target device partition(s) to make any further changes needed.
WiFi may depend on the desktop you're selecting, so you'll have to check where the one you're using puts config files. /etc/NetworkManager/system-connections/ is probably most likely.
