I think Wasp-OS is a good starting place. You don't even need a Pinetime watch, it has a simulator. You need a Linux system that fits the prerequisites (Debian buster does). Follow the instructions and you can do testing on the simulator very easily and you don't have to worry about unlocking the watch or flashing the bootloader etc. There are several sample apps supplied, written in Python.
