If you do not need the gui then use one of our base images. They boot to an frame buffer console ( black screen , which may or may not be used ) and of course you can logon to them with a serial console or via telnet or ssh.
Otherwise, the easiest way to accomplish what you want is to boot to an xdm screen ( chooser ) that allows you to logon and start the desktop; BUT, do no auto logon ! In this setup the machine boots to a signon panel but DOES NOT start X or the window manager. Again, you can logon to one of the fbcon(s), serial console, or ssh into the SBC from remote. This is preferrable IMHO to booting into an fbcon and then running startx.
