Any 720 or 1080p screen and you should be fine.
But coming back to touch panels - I found some 'cheaper' touch screens using USB with lower resolutions than 720p -- some of those would MOST LIKELY work with Linux. I am not going to post any as I do not wish to mislead you into thinking that any of them will certainly work. But If you intend to use Linux, then first check which resolutions are currently supported (quite a few are), and then make a decision for yourself. If you want to use droid however, I would just wait a bit until the LCD panel is back in stock ...
