Different hardware, different driver, different platform and possibly different HDMI version. There's quite a lot of scope for little differences to cause a problem. I'd be more interested in the differences between the monitors that work and the ones that don't - that might help narrow down the possible cause(s). Are the HDMI versions different? Does it only happen with certain resolutions, refresh rates etc? Is there some EDID data quirk?
Of course there is very different hardware in all the monitors and most probable different versions of HDMI.
But with all the X86 systems and all the monitors I have used there was never ever the slightest problem with HDMI output. Therefore my conclusion is:
The PinePhone with the dock delivered has not been sufficiently tested before and we are the paying guinea pigs of pine64.org who once more does not at all care for customer satisfaction.

Hey I've just received my Manjaro Community edition a couple a few days ago, and I'm unable to get my external monitor to work via the supplied adapter/dongle.

What is this update?!!? I need to update, but am uncertain how.

Given the pace of software development, whatever they install at the factory will be out of date by the time you get the phone. It's really only there as a starter. See the wiki for a generalized install method, and for the list of OS options and links to their respective instructions, wikis, FAQs etc. I'd recommend Megous' multi-boot image on an SD card as an easy way to give most of them a try - they won't be quite the latest versions, and the kernel won't be quite as stock so there might be some minor behaviour differences, but it's an easy way to find out which ones you want to try installing properly.
