The original jessie-openmediavault-rock64-0.5.10-118-arm64.img.xz from ayufan's GitHub is microSD boot. If you are using PINE64 Installer, there are 2 versions of OMV, one is microSD and another is microSD to eMMC.

Added Community Build Jessie OpenMediaVault Linux Kernel ver 4.4 [microSD to eMMC Boot] [0.5.10-118]
Hello, this image is great, but I would like it to be the ARMHF version. Is there any way to make it or convert it from microSD boot image? thanks

Now I want to pass it to the EMMC and I think the easiest way is with the image SD to EMMC. In the wiki is the version for arm64, so I would need the version armhf. There is an armhf version of the OMV image that allows you to install Plex (I'm guessing thats what you're after). Take a look in ayufan's git.

1) Mount linux-root
2) Navigate to /home/Rock64 directory
3) replace the existing OS image with the image you want to install (remember to rename it).
That should be all. Let me know if that does the trick.

Basically the MONITOR that is connected to HMDI-1 is Unknow for the image.
I tried to cvt 1920 1080 60 and xrandx --newmode & --addmode but the monitor goes black when selecting this HDMI

For starters, try a more recent build.

Your funny ... latest stable build from wiki is 0.5.10 ... but believe me I also tried xenial-mate-rock64-0.5.15-136-arm64.img already with no change.
The Pre-Release build like 0.6.1: jenkins-linux-build-rock-64-141 wont even boot up. So currently this is not a very good starting point for working with a Rock64.
