Hello noob here,
I'm looking for a lot of space!
Simple question; what is the max number of drives I can get the rockpro to use? and how might I best go about that? I assume I can use x2 SSD's in the USB ports, but what else can I plug into?

With an added SATA Controller card, you can potentially run up to 6 drives. There's a table in the wiki with confirmed info on PCI accessories you can use with the RP64 https://wiki.pine64.org/wiki/ROCKPro64_Hardware_compatibility

Do'h - I did read through the wiki and I missed that page! Thanks for the link and not slaying me for not reading the wiki haha

No need to be slaying anyone when they're in the pursuit of knowledge! Besides, there's enough pages in the wiki it can be easy to not see page links when they're right under our noses. (It's certainly happened to me plenty!)
