Depends for what. Stretch has worked fine for me.

Yes, but there is only minimal version without Desktop.

IIRC there should be a script in /usr/local/sbin to install either i3 or mate. Otherwise, you can just install any desktop youd like you would normally on any computer ... for instance, XFCE

To connect to wifi from terminal either set up the config in /etc/interfaces (check Debian/Ubuntu wiki) or install a network manager command line interface like 'nmtui' ...
