It was brought up earlier this year about a Pine 64 with 3GB of RAM, and that it would be “explored”.
So has it been explored yet, and if so, will there be a 3GB Pine 64?

Ah yes, there was talk of exploring it in February possibly, not sure what came of that. Pine seem to have gone a slightly different way with the manufacture of the PADI IoT Stamp, but they may still be considering a vamped-up fully-fledged board.

Well, there hasn't been much discussion about it since it was raised in January, other than a mention here,  probably as they were overwhelmed with Kickstarter orders! Wink I suspect it is still on the roadmap, but isn't that high a priority, as 2GB on this class of board is indeed a lot of memory. Plus I'm pretty sure longsleep has included the zram module in the kernel, so you can get more out of your memory that way...
I have explored the 3GB memory configuration with hardware engineers and vendor. Samsung is the ONLY that produce 3GB memory chip that we aware. After several exploring, the conclusion is not to process on current time being.
