I can only second the recommendation to replace the shipped Sailfish OS with a standard GNU/Linux distribution that is actually Free Software and that will have sudo working out of the box. Either postmarketOS, or Mobian, or DanctNIX (Arch Linux ARM). With Plasma Mobile or Phosh as your graphical environment. (Note that postmarketOS now uses doas as its default sudo implementation, but it can be invoked as sudo, so you will probably not notice the difference.)
