UPDATE:
The mrfixit Debian image is the image that is available for download from the ROCK64 Software Release Page on the Pine64 wiki. At the moment this appears to be the only image for V3.

I went ahead and soldered the connection to test it, and yeah, it works. I can boot any V2 image I want on my V3 now.
