Hello,

i'm a noob in these things but which image do I need to download/use? The DD image or the rooted DD image? What is the difference?

The rooted image allows you more control over the Android OS. But if you happily use your phone / tablet without having it rooted, then you should be fine just a standard DD image. 

As I understand it, some apps will only work if rooted. Others will only work if not rooted.

Just remember, if you are downloading a DD image, you cannot use PhoenixCard to burn it. You will need to use either the dd command in a terminal (Linux/Mac), or Win32DiskImager, or something similar like Rufus (Windows).
